Pumpkin Bliss Balls

No-bake pumpkin bliss balls… vegan, gluten-free, oil-free and refined sugar-free! These mini pumpkin bites are a guaranteed hit with family and friends over the Autumn period. 


Hi baking friends! I hope you’re all enjoying Autumn as much as I am! Watching the leaves outside my window turn from green to amber to brown is just so calming! 

I’m going to keep this recipe post brief as it’s an easy recipe and most of my other recipe posts are essays (so sorry!!)

These little treats were actually unplanned. I was making pumpkin whoopie pies and I just had some pumkin puree left and I didn’t want to leave it to go to waste so I quickly whipped these up! I’m totally obsessed with pumpkins and I just LOVE how these little pumpkins turned out!

Usually this is where I leave some baking tips but given that these are no-bake and the EASIEST thing to whip up I guess we’ll just jump right in!!!

No-bake Pumpkin Bites

Vegan no-bake pumpkin bites! These healthy and delicious pumpkin bites are a guaranteed hit with your family and friends over the holiday period. So simple yet so delicious!

Ingredients
  • 10 medjool dates
  • 2 tbsp maple syrup
  • 120g pumpkin puree
  • 1 tbsp ground flax meal
  • 100g oat flour (rolled oats, processed)
  • 1 tbsp pumpkin spice (or cinnamon)
  • pinch of salt
Directions
  • Step 1 Process the dates and maple syrup in a blender or food processor until smooth.
  • Step 2 Mix the date paste with the pumpkin puree. Add in all the dry ingredients and work into a ball.
  • Step 3 Split the mix into 10 equal sized pieces. Roll into balls.
  • Step 4 Use a piece of string or the edge of a spoon to carve edges to resemble pumpkins.
  • Step 5 Use sticks from star anise or the small branches from pears or apples to create a “stalk” for the mini pumpkins!
