Vegan Chocolate Tart

Vegan Chocolate Tart

Cranberry and orange vegan chocolate tart! The pinnacle of Christmas baking! The synergy of cranberry and orange in this lusciously rich chocolate dark is guaranteed to impress friends and family over Christmas!

This absolute showstopper of a dessert has been the MVP so far from my Christmas baking. If you’re anything like me you might be thinking… cranberry sauce… in a chocolate tart?? I know, it sounds weird! Cranberry sauce, however, is of course just a funny name for cranberry jam! The bitter notes of cranberry, balanced with the sweet citrus flavours of orange blend perfectly in this vegan chocolate tart.

Please don’t be intimidated by the recipe which includes a fair few ingredients. Ultimately you can cut as many corners as you like – if you want to use an easier crust recipe or use a shop bought jam, go right ahead!

How long will this tart last?

You can make the crust a day or two in advanced, just be carefully refrigerating dry crusts because they like to absorb moisture from the fridge. This tart, once filled, will last 5-7 days kept in an airtight container in the fridge.

Can I use shop bought cranberry sauce instead of the one in the recipe?

Absolutely! I wrote my recipe here because I wanted to incorporate orange into the dessert through another element of the tart. Feel free to substitute regular cranberry sauce or jam!

Cranberry and orange vegan chocolate tart! This dessert is the pinnacle of Christmas baking! The synergy of cranberry and orange in this lusciously rich chocolate tart are unparalleled!

By:

Ingredients
  • Crust:
  • 180g plain, all-purpose flour
  • 40g cacao powder
  • 50g icing sugar
  • 120g vegan butter, chopped
  • 2 tbsp cold water
  • pinch of salt
  • Cranberry Orange Jam:
  • 200g cranberries
  • 100g maple syrup
  • 50ml water
  • 1 orange (zest and juice)
  • Chocolate Orange Ganache:
  • 350g dark chocolate
  • 200ml vegan cream (I use soy, you can also use coconut)
  • 100ml orange juice (3 oranges)
  • 2 tsp orange extract
Directions
  • Step 1 Crust: Sift the flour, icing sugar, cacoa powder and salt into a mixing bowl.
  • Step 2 Add in the chopped vegan butter and work into the dry mix until crumbly.
  • Step 3 Add the cold water and compress into a ball. Chill in the fridge for 30 minutes.
  • Step 4 Pre-heat the oven to 200C.
  • Step 5 Scatter flour on a work surface, remove the pastry from the fridge and roll out to a thickness of 4mm.
  • Step 6 Spray your tart tin with baking spray (or rub it with butter) and a light dusting of flour.
  • Step 7 Pick up the pastry using a rolling pin and drape over the tart tin. Press the pastry against the tart tin all the way around and cut off the excess.
  • Step 8 Place parchment into the tart tin with baking beads or dry lentils/rice and blind-bake for 25 minutes. Remove the baking beads and bake for a further 10 minutes.
  • Step 9 Take the tart case out of the oven to chill while you work on the fillings.
  • Step 10 Jam: Place all the ingredients in a pot over medium heat. Stir constantly and bring up to a boil for 5 mins.
  • Step 11 Gently smash the cranberries against the side of the pot. Continue to cook for 10-15 minutes until the jam is thick. Optionally, use a hand blender to purée the cranberry jam.
  • Step 12 Once ready, allow the jam to cool for 2 hours and then spread across the base of the cooled tart crust.
  • Step 13 Ganache: Heat the vegan cream on the hob with the orange juice and orange extract. Once it is hot, pour the hot cream over the chocolate. Leave for 1 minute and then mix together until homogenous.
  • Step 14 Pour the ganache over the jam layer.
  • Step 15 Garnish with decorations.

  • Hi Tom,
Thanks for this interesting recipe! Just a question. Is there something else I could use instead of cranberries? Am not good with those. I thought of apricots but those don’t agree with me either. How about berries? Anything else? Thanks.

    • Hi! Yes you can use any other berry! This was Christmas recipe so I wanted the filling to recipe cranberry jam at christmastime but you can skip it all together if you’d prefer! Tom
