Vegan Key Lime Pie Tart

Happy St. Patrick’s day everyone!

Given the celebration I had to bake something green and what better way to celebrate than with a Key Lime Pie!

So I don’t usually think too much about sugar/fat content when I bake as I’m mainly vegan for the animals and environmental impact- not my waistline! However, I’ve crafted this recipe to be on the healthy side or at least “natural” side with a lot of ingredients that you’d include in a healthy balanced diet – fresh lemon/lime juice, oats, natural sugars, etc.

This recipe is completely gluten-free, refined sugar-free and so easy to make you’ll regret not trying it!


I must admit I’m pretty bad at food photography and food presentation in general. I’ve had zero training as a chef/baker/dessert-maker so I just improvise a lot of my presentation! Given how simple this recipe is, I decided to have a little fun with the toppings!

Zesty, healthy key lime pie recipe! Gluten-free

Ingredients

  • Oaty coconut base
  • 100g Oat flour/rolled oats

  • 40g desiccated/shredded coconut

  • 60g maple syrup

  • 80g chopped, ground nuts (I used almond)

  • 30g coconut oil

  • Filling:
  • 240ml lime juice

  • 1.5 cans of full fat coconut milk

  • 2tsp agar powder

  • 60g cornflour

  • 2tsp vanilla extract

  • 100g (5tbsp) maple/agave syrup

  • 1 drop green food colouring or 1tsp matcha powder

Directions

  • Pre-heat oven to 175C/350F.
  • Process oats/oat flour, nuts and coconut in a food processor until a fine meal (roughly).
  • Add coconut oil and maple syrup and squish together until it is a compact ball.
  • Grease and line a tart tin (with coconut oil). Squish the base into the tin until you have a smooth flat layer.
  • Bake for approximately 25minutes (or until it smells good/turns light brown).
  • On a medium heat combine all filling ingredients except for agar powder. Reduce for approximately 5 minutes until thickened.
  • Add the agar powder and stir through with a whisk. Immediately take off the heat and pour into the tart shell and put in the fridge to cool overnight.
  • Go crazy with the decorations!
