Vegan Lace Cookies

Vegan Lace Cookies! These delicious cookies are probably THE easiest cookies EVER to make and are crazy good. They are only 6 ingredients and only take 6 minutes to bake!


If you guys are familiar with my blog you’ll know I love to challenge myself in the kitchen. I love baking meringues, dacquoise, layered cakes, pastries and macarons, just to name a few! However… I appreciate that this isn’t most people and y’all really just want some easy and delicious treats!! So here you go! My easiest ever cookie recipe and this one happens to be gluten-free too! 

These vegan cookies will blow the socks off anyone who tries them. I especially love to give to them to non-vegans and watch their faces when I reveal they’re completely plant-based! Check out my instagram highlights to see me making these!

Interestingly, lace cookies are pretty much already vegan provided you use a vegan “butter” which is what I’ve done here! When looking for a vegan butter I always recommend choosing those with at least 75% fat. When it has less than 75% fat, it typically has a higher water content which can disrupt the baking process.

My number 1 trick for this recipe is to use a large cookie cutter to “round off” the cookies after they come out of the oven. While hot the cookies are still malleable so you can gently adjust them into perfect circles. I could talk all day about these delicious treats but I know y’all are hungry so let’s answer some quick questions then dive right in! 

How many cookies does this recipe make?

This recipe makes between ~36 cookies depending on the size you make them! I put 6 cookies on a tray at a time (for spacing) and I usually get at least 6 batches out of the batter. 

How long do laces cookies last?

These cookies will last up to 2 weeks kept in an airtight container at room temperature. I have had them last as long as 1 – 2 months but it’s preferable to eat them sooner.

 

 

What almond flour should I use?

You can use both almond flour and meal for this recipe! The finer the flour, the smaller the holes will be in the cookies! If you use a chunkier almond meal (typically what I use) you’ll find the texture is more bumpy too.

How do you know when the cookies are done?

These cookies only take 6-8 minutes to bake so you might as well sit around and watch them spread! They are ready when the edges start to turn a darker golden brown. It is possible your oven might have heat spots and they will cook unevenly so don’t be afraid to rotate the tray half way through.

These delicious vegan lace cookies are unapologetically mouthwatering. Every single person falls in love with these cookies whenever I make them!

Ingredients
  • 110g light brown sugar
  • 100g vegan butter or margarine (75%+ fat)
  • 65g almond flour
  • 2 tsp soy milk
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 100g chocolate (optional)
Directions
  • Step 1 Pre-heat the oven to 180C.
  • Step 2 Place a pot on the stove and use a low heat to melt the butter.
  • Step 3 Once the butter is completely melted, add in all the other ingredients except for the vanilla extract. Turn the heat off and stir until the sugar has dissolved (2-3 minutes) and the batter is smooth.
  • Step 4 Finally whisk in the vanilla and set aside for the 5 minutes to cool. The mixture will be very soft, but malleable and a little oily.
  • Step 5 Line a baking tray with parchment or a silicone mat.
  • Step 6 Use a teaspoon to spoon cookie batter onto the tray leaving at least 5cm between each cookie because they spread A LOT! This recipe yields 24 individual cookies so you’ll have to do a few batches.
  • Step 7 Bake for 6 – 7 minutes until golden brown.
  • Step 8 Remove from the oven and allow to cool completely.
  • Step 9 Melt the chocolate in a bain-marie or using bursts of 30 seconds in the microwave.
  • Step 10 Decorate the cookies with chocolate.
  • Step 11 Serve!

  • I think the suggested temp for the oven is off…I think it should be 280 as I tried the 180C suggested and it did nothing….Great recipe!

    • Just want to say that my comment about the temp of the oven is INCORRECT! The recipe is perfect as suggested….it’s me that needs reviewing about Fahrenheit and celsius!!

      I’m afraid I haven’t tried any other flours yet. Other nut flours would likely work well but not wheat flours as they absorb a lot more moisture and behave quite differently in the oven. Tom
